Super Quick, Super Healthy Paleo Breakfast Recipe


Sweet Potato Toast with Avocado, Scambled Eggs, Spinach and Grilled Rosemary Asparagus.

Prep Time: 5 minutes

Cook Time: 15 minutes

Ingredients:

1 Medium Sized Sweet Potato

1 Packet of Asparagus

1/2 an Avocado, ripe & smashed

2 Medium sized Free Range Eggs

1/2 Red Onion, chopped finely

1 handful of Spinach, washed

1 tsp of dried Rosemary

2 tsp of Turmeric Powder

2 tsp Mixed Herbs

2 tsp of Pink Himalayan Salt

2 tbsp Extra Virgin Olive Oil

Optional: Pomegranate seeds and fresh Lemon juice for garnish.

Instructions:

Wash your Asparagus, Spinach and Sweet Potato.

Slice your Sweet Potato length ways it should look like thin slices of toast. Put the slices in the toaster for 6 Minutes. If when they pop u they are not crispy enough or still raw keep popping them back in the toaster for 2 additional  minutes until you get the desired texture.

Drizzle your asparagus with Extra Virgin Olive Oil and sprinkle with Rosemary and then put under the grill for 10 minutes until browned.

Slice your avocado in half and save the other half for later. With the half you are about to use, take your fork to mash your avocado until the consistency is smooth.

Crack two medium sized eggs into a separate bowl and add 2 teaspoons of water to make the eggs fluffy. Add the turmeric, mixed herbs and  salt to mixture.

Whisk.

Add the EVOO your pan and when the oil is hot, sauté the red onions until fragrant and then add the egg mixture to the pan and stir.

And Serve. 

This was super yummy and surprisingly very filling without the bloating feeling in the morning that normal toast gives you.
